Have you visited Barnstaple yet?
Barnstaple is the main town in North Devon and, according to Wikipedia, possibly the oldest borough in the UK. It offers numerous shops, restaurants, and a fantastic theatre. There are several car parks to choose from, dotted around the town, and some pretty streets to walk in. Make sure you visit the Victorian pannier market with loads of stalls to browse around. There is even a pretty riverside to see.
After you have exhausted the shops, make sure you sample the lovely food and drink on offer. We stopped and had a lovely snack at a very friendly tea rooms, just off Butchers Row, there are a few to choose from and you will be sure to find plenty of Devon Cream Teas to keep you going. It is your decision whether you put the jam on first, or the cream!
